Ginger Peanut Lime “GPL” dressing

1/4 cup peanut butter

2 cloves garlic, peeled

1 tbsp ginger, peeled, roughly chopped

1 tbsp honey

2 tbsp rice vinegar

1 tbsp oil (avocado, canola, coconut)

2 tsp sesame oil 

juice of 1 lime

1/4 cup cilantro, roughly chopped

1 tbsp soy 

1/4 tsp crushed red pepper 

salt & pepper to taste 

  1. Add ingredients to food processor or blender and pulse until emulsified. Dressing will be thin, but will thicken a few minutes after blending. 
  • Dressing can be stored in an airtight container in the fridge for up to 5 days. 
  • Enjoy over chicken, shrimp, veggies or rice!
